Best veggie burger I've ever had!
What’s for dinner tonight?
A daily conversation in our house… No one wants to eat the same thing over and over again, so we are constantly experimenting and trying to find new recipes for inspiration. And trust me, sometimes it’s a bit of a disaster (if you stick around for long enough I might share some of those stories with you).
Tonight we felt like having a burger. But not just any burger, we challenged ourselves to create a veggie burger that actually tasted nice… and it worked! It was so good that we wanted to share it with you!

Cooking time: 15 minutes
Ingredients
Burger
- Coconut oil
- 3 Large mushrooms, chopped (I used portobello)
- 2 sprigs of fresh thyme (or big pinch of dried thyme)
- 1 × 200g tin of haricot beans, drained
- 1/4 apple, peeled
- 1 Medjool date
- 1 clove of garlic
- 1/2 green chili, diced (if you like spicy food)
- 1 tbsp tahini
- 1 tbsp tamari
- 50g rice
- 25g oats
Directions
Turn your oven on to 200C.
Cook the rice in 3x the amount of water for 15-20 minutes.
Sauté the mushrooms and thyme in a spoonful of coconut oil. Add salt and pepper to taste. Once the mushrooms have browned, set them aside to cool.
Then, in a blender or food processor, add the drained beans, apple, date, garlic, tahini and tamari. Blend until smooth. In a medium mixing bowl, combine the cooked rice, oats, and mushrooms and bean mixture. Place aside for 10 minutes to allow the mixture to set.
Shape the mixture into 4 round patties and place them on a non-sick baking tray. Bake them for 10-15 minutes, until they have slightly browned.
And there you go! Add any of your favorite toppings or cheese and enjoy them on a nice bun, or in some baby gem lettuce.
We had ours with halloumi, avocado, and South Devon apple chili jam! What can I say, I love spicy food!
